Los ingredientes básicos de la sopa vietnamita Pho (¡y cómo hacerla más ligera!)

Hoy te traemos un viaje directo a Vietnam… ¡a través del paladar! Vamos a descubrir juntos los ingredientes básicos para preparar una auténtica sopa vietnamita Pho, una receta reconfortante, aromática y mucho más ligera si la adaptas con nuestros consejos (puedes ver la receta aquí).

El Pho es un plato muy popular en Vietnam, donde se toma a cualquier hora del día: para desayunar, almorzar o cenar. Su base es un caldo suave y especiado, normalmente de ternera, aunque también se puede preparar con pollo o en versión vegetariana con caldo vegetal.

¿Cómo se hace un buen caldo Pho?

El truco para que quede limpio y lleno de sabor está en hervir los huesos de ternera durante unos 5 minutos, desechar esa primera agua, enjuagar los huesos y luego cocerlos lentamente con especias y aromáticos:
cebolla, jengibre fresco pelado, anís estrellado, cardamomo, clavo, canela, un poco de sal y unas gotas de salsa de pescado oriental.
Este paso es clave para conseguir ese caldo claro, fragante y lleno de matices.

¿Qué más lleva el Pho?

  • Fideos: tradicionalmente se usan fideos de arroz, pero si quieres una opción más ligera y baja en calorías, te recomendamos probarlo con nuestra pasta shirataki de konjac. ¡Tiene solo 7 kcal por cada 100 g frente a las 111 kcal de los fideos de arroz!

  • Proteína: lo más típico es añadir ternera fileteada muy fina, que se cocina directamente en el bol al verterle encima el caldo caliente. También puedes usar cerdo, pollo o, si prefieres una versión veggie, combinar tofu con verduras salteadas.

  • Acompañamientos: parte del encanto del Pho es personalizarlo. Sirve siempre un platito con:

    • Cebollino fresco

    • Brotes de soja

    • Hojas de albahaca, cilantro o menta

    • Un gajo de lima para exprimir

    Así cada persona puede darle su toque.

  • Toques finales: si te gusta un poco de picante o más sabor, añade unas gotas de salsa Sriracha, salsa Hoisin o más salsa de pescado, ¡a tu gusto!
